La Confrérie de la Chaîne des Rôtisseurs
International Society of Gastronomes
Created by King Louis IX in 1248

Background and Introduction

La Chaîne is the world's oldest gastronomic organization, which was originally founded in 1248 as a guild for the rôtisseurs (roasting chefs) for the upper class. It was granted a Royal Charter and a Coat of Arms in 1610. The object of the Guild was to perpetuate the Standards of quality befitting the Royal Table. The society was revived in 1950 by a group of dedicated culinarians and gastronomes and now has over 20,000 members worldwide. Unlike most gastronomic organizations, La Chaîne consists of members from both the professional and nonprofessional segments of the gastronomically inclined population. Each local bailliage (chapter) holds periodic formal events and amicals at wonderful venues featuring the finest cuisine, expertly selected wines and after dinner refreshments. Members are also welcome to attend other bailliage's functions throughout the world. The Bailliage des Etats-Unis (United States Chapter) is by far the largest of all national chapters with local chapters in almost every state and in most major cities. There are about 6,000 members in the United States alone.

La Chaîne creates a bond of friendship across professions, cultures and boundaries, giving special attention to maintaining the art of the cuisine and supporting the young professionals. Anyone who appreciates great food, wine and conviviality should investigate membership in our great organization. (more history)

The Chaîne des Rôtisseurs, Bailliage des Etats-Unis, unites professional and amateur gastronomes in a private, not-for-profit society committed to promoting the culinary arts and those of enology and hospitality through example, education, and camaraderie.

Based on the great traditions and high standards of the medieval French guild of rôtisseurs or "meat roasters," our confrérie celebrates the pleasures of the table, encourages the development of young professionals by awarding scholarships and sponsoring competitions, and, as part of an international organization, fosters friendships among members around the world.

"Wine improves with age. The older I get, the better I like it." - Anonymous

"It sloweth age, it strengthneth youth, it helpeth digestion, it cutteth flegme, it abandoneth melancholie, it relisheth the heart, it lighteneth the mind, it quickeneth the spirits, it cureth the hydropsie, it healeth the strangurie, it keepeth and preserveth the head from whirling, the eies from dazeling, the toong from lisping, the mouth from maffling, the teeth from chattering, and the throte from ratling: it keepeth the weasan from Stifling, the Stomach from wambling, and the heart from swelling, the hands from shivering, the sinewes from shrinking, the veines from crumpling, the bones from aking, the marrow from soaking" - from a 16th Century Manuscript

"A drink or two a day of wine, beer, or liquor is, experts say, often the single best nonprescription way to prevent heart attacks-better than a low-fat diet or weight loss, better even than vigorous exercise.  Moderate drinking can help prevent strokes, amputated limbs, and dementia."  (NY Times, 12/30/2002)
