Welcome to the Bailliage de Des Moines of the Chaine des Rotisseurs!  Founded in Paris in 1248 the Chaîne des Rôtisseurs is the oldest and largest gastronomic organization in the world.  We are proud of roots that take us back to the founding, in France, of the Guild of Oyers, or "Goose Roasters".  Today we are devoted to preserving the camaraderie and pleasures of the table.

A key criterion which distinguishes the Chaîne from other organizations involved in wine or food is the interrelation between amateur and professional.  Membership is open to both culinary professionals and non-professionals who share a passion for the pleasures engendered by good cuisine, good wine and good company.

In the United States, there are nearly 150 bailliages (chapters), each offering a variety of culinary activities to suit the interests of local members.  With 29 members, the Des Moines Bailliage was officially formed in 1979 and offers a calendar of six events each year in fine restaurants throughout the area.  Themed events, black-tie galas and less formal meals, picnics, and barbecues provide a range of pleasurable tables.

  • At regional gatherings, where members network and experience the best a region has to offer.
  • At national conventions in cities where the future of food and wine is being charted now.
  • At international events, where old-world manners and impeccable cuisine bring members together in a spirit of camaraderie.
  • At Société Mondiale du Vin gatherings, where members learn about and experience wines and other crafted beverages of distinction.
  • On Brillat-Savarin trips, where members immerse themselves in the traditional food and beverages of a region.
