Welcome to the website of the Garden State Bailliage, formerly the Hunterdon-Princeton Bailliage, of the Confrerie de la Chaîne des Rôtisseurs, the world’s oldest gastronomic organization! The name of the bailliage was changed on Jan. 8, 2006 to better reflect the geographic diversity of its members.

Established in 1979 by six members of the New Jersey Bailliage feeling the need for another chapter in the state, the Hunterdon-Princeton Bailliage’s conception marked the establishment of the sixty-second bailliage of the Confrerie de la Chaîne des Rôtisseurs in the United States. Continuing the Chaîne’s commitment to good food, good wine and good comraderie, our bailliage, now in its twenty-first year, has swelled in membership from the original six, to our current membership of 100. Devoted to bringing together professional and amateur gastronomes to celebrate epicurean tastes, our bailliage hosts about ten events annually, running the gamut from black-tie dinners to our annual Bastille Day celebration.

The Garden State Bailliage, also noted for its creativity in staging events, celebrates fine food and fine wine at some of the area’s most noted restaurants. Additionally, thirty per cent of our members hail from the professional ranks, including chefs from some to the top restaurants, hotels and country clubs in the NY/NJ/PA metropolitan area.

Utilizing our available resources, the Garden State Bailliage maintains a commitment to the community. The Bailliage has held fundraising events benefiting March of Dimes and the Hunterdon chapter of the Heart Association. Also, the Garden State Bailliage supports the future of fine food by inducting local high school culinary students with the title of Rotisseur; these students participate as full members and gain invaluable experience in member’s kitchens and under the tutelage of our professional members. Additionally, the Garden State Bailliage offers scholarship awards to students pursuing secondary education in the culinary fields.
