La Confrérie de la Chaîne des
Rôtisseurs
International Society of
Gastronomes
Created by King Louis IX in 1248
Background and Introduction
La Chaîne is the world's oldest gastronomic organization, which was originally founded in 1248 as a guild for the rôtisseurs (roasting chefs) for the upper class. It was granted a Royal Charter and a Coat of Arms in 1610. The object of the Guild was to perpetuate the Standards of quality befitting the Royal Table. The society was revived in 1950 by a group of dedicated culinarians and gastronomes and now has over 20,000 members worldwide. Unlike most gastronomic organizations, La Chaîne consists of members from both the professional and nonprofessional segments of the gastronomically inclined population. Each local bailliage (chapter) holds periodic formal events and amicals at wonderful venues featuring the finest cuisine, expertly selected wines and after dinner refreshments. Members are also welcome to attend other bailliage's functions throughout the world. The Bailliage des Etats-Unis (United States Chapter) is by far the largest of all national chapters with local chapters in almost every state and in most major cities. There are over 7,000 members in the United States alone.
La Chaîne creates a bond of friendship across professions, cultures and boundaries, giving special attention to maintaining the art of the cuisine and supporting the young professionals. The Chaîne des Rôtisseurs, Bailliage des Etats-Unis, unites professional and amateur gastronomes in a private, not-for-profit society committed to promoting the culinary arts and those of enology and hospitality through example, education, and camaraderie.
Based on the great traditions and high standards of the medieval French guild of rôtisseurs or "meat roasters," our confrérie celebrates the pleasures of the table, encourages the development of young professionals by awarding scholarships and sponsoring competitions, and, as part of an international organization, fosters friendships among members around the world.
