The dream of L' Academic Brillat-Savarin
became a reality at the National Council Meeting held in Honolulu
June 2000. Our dream was that the L'Academie would support regional
cuisines, encourage gastronomic literature, and support culinarians
through contest and awards. We also thought that there was an
opportunity to create a preeminent honor society for those students
who dedicate themselves to culinary arts and the hospitality
industry.
And so, in Honolulu, the creation of a group to be called Les
Foundateurs was announced. Les Foundateurs were limited to the
first 100 Chaine members who would donate a sum of $1,000. The
concept was first announced at the National Council dinner at
the Royal Hawaiian Hotel. That very evening, 55 Chaine members
stepped forward and contributed. At the end of 2001, there were
100 Foundateurs (13 Honolulu members and 2 members from the
Kauai/Oahu Chapter).
The first Medaille de Merit was awarded to Maitre Rotisseur
Alan Wong of the Honolulu Chapter for his exceptional knowledge
of regional cuisine and his dedication to young people in their
pursuit of culinary education.
