Home Page Welcome to the Bailliage de Laguna. As a member of the Confrerie de la Chaine des Rotisseurs, you belong to one of the oldest and most respected international gastronomic societies in the world. It was founded in Paris in 1950 and is devoted to promoting fine dining and preserving the camaraderie and pleasures of the table. Its traditions and practices are based on the old French royal guild of meat roasters whose history traces back to the year 1248. The society has over 100 international bailliages and nearly 150 national bailliages (English “balliwick”) headed by a bailli (“bailiff”) and other officers who plan the chapter’s events at the best local restaurants and hotels, some of them being members of the Confrerie. This provides an interaction between the professional and amateur members which is a unique aspect of La Chaine and is one of the most enjoyable and informative part of being an active member of the chapter.. Membership entitles you to receive the U.S. Chaine des Rotisseurs Gastronome magazine which describes the activities of the bailliages around the country. Members also receive an annual guide to Chaine affiliated restaurants and hotels. These establishments often display a metal plaque bearing the Chaine’s official coat of arms. Members receive an especially warm welcome in these establishments, so remember to always take your membership card with you when dining! La Chaine also has a charitable purpose. Many of our bailliages hold events to support the young people new to their profession by contributing to local culinary schools. The national Chaine des Rotisseurs Foundation provides scholarships to schools such as the Culinary Institute of America, Johnson & Wales University, and the University of California at Davis. The society organizes the Jeune Commis (Young Chef) and the Sommelier (Wine) Competitions from each of our ten national regions. The winner goes on to compete in the international finals. For those of you who have a special knowledge or interest in wine and spirits, l’Ordre Mondial des Gourmets Degustateurs will offer you the opportunity to attend interesting and informative wine related events including trips to wine producing regions both here and abroad. This society within La Chaine des Rotisseurs encourages all members of La Chaine to enhance their membership by participating in l’Ordre Mondial with its varied and enriching activities. The Bailliage de Laguna intends to provide its members with new and exciting culinary experiences that will enrich and enlighten our members. As our adopted motto states: “We will take you somewhere you have never been before!” Vive La Chaine!
