One of the true joys of the Chaîne experience is the opportunity to marry well-crafted Chefs' cuisine with well-aged wines. Many years ago the Bailliage du Minneapolis chose to cellar fine wines, buying them when the price is reasonable and aging them into their prime. See, for example, our recent dinner “Celebrating Bordeaux.”
