For those who enjoy the camaraderie and pleasures of the table, the Chaîne des Rôtisseurs provides ample opportunity on a local, regional, national, and international level. We're proud of roots that take us back to the founding, in France, of the Guild of Oyers, or "Goose Roasters," in 1248. La Chaîne des Rôtisseurs is the oldest and largest gastronomic organization in the world. Today, more than 6,000 U.S. members in 130 national bailliages ("bailiwicks") and more than 22,000 members in 80 countries around the world celebrate the Chaîne experience. The National office is located at Fairleigh Dickinson University in New Jersey.
Underlying La Chaîne's growth is the organization's sense of purpose. A key criterion which distinguishes La Chaîne from other organizations involved in wine or food is the interrelation between amateur and professional. In La Chaîne we strive for balanced membership representing professionals involved in food preparation, service in hotels, private clubs and restaurants; wine, food and equipment suppliers and world-renowned lecturers, writers and critics, as well as knowledgeable laymen who, due to their interest in learning and/or well traveled backgrounds, are in a position to enjoy the pleasures engendered by good cuisine, good wine and good company.
The Bailliage du Springfield organizes four to six events each year in fine restaurants throughout the area. Themed events, black-tie galas and less formal meals, picnics, and barbecues provide a range of pleasurable tables. The local Chapter has also been very active in supporting a local culinary scholarship with Lincoln Land Community College program and recently helped sponsor a local chef at the Young Chef Rôtisseur Competitions as a way of developing future chefs by giving them the opportunity to test and demonstrate their skills.
The Springfield Chapter of the Chaîne des Rôtisseurs was officially formed in 1969 and currently has 65 active members. Bailli John Dale Kennedy is surrounded by a dedicated Board of Directors, whose goal is to provide high quality culinary events, ranging from black tie multi-course gastronomical dinners at the areas finest restaurants and hotels, to casual summer picnics and less formal themed dinners.
